Wild Rice and Mushrooms

My mom's favourite "healthy" rice dish

INGREDIENTS:
2 small onions, diced
½ bag of mushrooms
1 cup wild rice
1 cup regular rice
1 tsp dried thyme
salt and pepper
chicken stock

DIRECTIONS:

  1. Cook the wild rice (see package for proportions) and the regular rice (1 rice:2 water) in different pots. The wild rice will need to cook for much longer. Try substituting chicken stock for part of the cooking water with either rice.
    Meanwhile, sauté the onions and mushrooms in butter. Add the thyme, salt and pepper to taste.
    When the rices are cooked, mix everything together and enjoy!
