Papaya chile salsa
Sweet fruits, hot chiles, and scented herbs make a great salsa combination

INGREDIENTS:
- 1 fresh ripe papaya
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red chile, such as serrano, seeded and chopped
- 1 tbl. grated ginger
- 1 large handful of cilantro, torn
- 3 limes, use finely grated zest and juice
- salt and pepper to taste
DIRECTIONS:
- Peel the papaya with a vegetable peeler. Cut the papaya and peppers in half and remove the seeds. Chop into ½ inch dice. Put into a bowl, then add the chile and ginger.
- Stir in the cilantro, lime zest and juice, salt, and pepper. Set aside for 30 minutes before serving.
