Papaya chile salsa

Sweet fruits, hot chiles, and scented herbs make a great salsa combination

INGREDIENTS:

  • 1 fresh ripe papaya
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red chile, such as serrano, seeded and chopped
  • 1 tbl. grated ginger
  • 1 large handful of cilantro, torn
  • 3 limes, use finely grated zest and juice
  • salt and pepper to taste

DIRECTIONS:

  1. Peel the papaya with a vegetable peeler. Cut the papaya and peppers in half and remove the seeds. Chop into ½ inch dice. Put into a bowl, then add the chile and ginger.
  2. Stir in the cilantro, lime zest and juice, salt, and pepper. Set aside for 30 minutes before serving.
