Tuscan Salsa Verde

INGREDIENTS:
- 1/4 cup capers
- 1/2 cup Italian parsley leaves, packed
- 1/2 cup fresh mint leaves, packed
- 1/4 cup fresh basil leaves, packed
- 2 anchovy filets
- 2 tablespoons red wine vinegar
- 1/2 cup olive oil
- sea salt and freshly ground black pepper to taste
DIRECTIONS:
- Combine all of the ingredients in a food procesor and puree until smooth. Season to taste. Makes approximately 1 1/4 cups.
