Tuscan Salsa Verde

INGREDIENTS:

  • 1/4 cup capers
  • 1/2 cup Italian parsley leaves, packed
  • 1/2 cup fresh mint leaves, packed
  • 1/4 cup fresh basil leaves, packed
  • 2 anchovy filets
  • 2 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • sea salt and freshly ground black pepper to taste

DIRECTIONS:

  1. Combine all of the ingredients in a food procesor and puree until smooth. Season to taste. Makes approximately 1 1/4 cups.
