Tomato Salsa

INGREDIENTS:
- 4 cloves garlic
- 3 or 4 slices fresh Jalapeno pepper (w/ seeds)
- (3 for medium, 4 for hot)
- 1/4 cup parsley (tightly packed, before chopping)
- ¼ cup sweet onion = Walla walla or other varietal
- ¼ tsp salt
- Sprinkle (about 1/8 tsp) each of: Chilli, cumin powder
- 6 Roma tomatoes
DIRECTIONS:
- Process all ingredients except for tomatoes in food processor. Cut tomatoes in half. Remove juice and seeds, and save this mixture in a separate dish
- Place tomatoes in processor and briefly pulse, taking care not to over process. Transfer mixture to serving dish.
- Stir in 1 tbsp of saved tomato juice, and ¼ tsp of lemon juice.
