Tomato Salsa

INGREDIENTS:

  • 4 cloves garlic
  • 3 or 4 slices fresh Jalapeno pepper (w/ seeds)
  •             (3 for medium, 4 for hot)
  • 1/4 cup parsley (tightly packed, before chopping)
  • ¼ cup sweet onion = Walla walla or other varietal
  • ¼ tsp salt
  • Sprinkle (about 1/8 tsp) each of:  Chilli, cumin powder
  • 6 Roma tomatoes

DIRECTIONS:

  1. Process all ingredients except for tomatoes in food processor.  Cut tomatoes in half.  Remove juice and seeds, and save this mixture in a separate dish
  2. Place tomatoes in processor and briefly pulse, taking care not to over process. Transfer mixture to serving dish.
  3. Stir in 1 tbsp of saved tomato juice, and ¼ tsp of lemon juice.
