Barbequed Brie with sun dried tomatoes and garlic
Goes great as a first nibbler for about 4 people. It is savory, not sweet.

INGREDIENTS:
- 5-oz round of brie cheese
- 2 tbsp dried tomatoes (packed in oil), minced fine
- 1 large garlic clove, minced
- 1/2 tbsp fresh parsley, minced fine
- 1/4 tsp coriander powder
- 1/2 lime
- black pepper
DIRECTIONS:
- Combine the dried tomatoes, garlic, parsley and coriander in a bowl. blend well and allow to sit at room temperature for at least 20 minutes. toss the mixture and then spread evenly over the top of the brie. have your barbecue pre-heated at medium to high heat (350 to 400°f). place the brie in in the coolest area of the barbecue, not directly above the heat. barbecue for approximately 10 minutes, or until the cheese just begins to melt.
- Using a wide spatula, carefully place the brie on a serving dish. squeeze the juice of the lime over it, sprinkle with black pepper and serve with melba toast or toasted baguette bread.
