Grilled Figs With Goat Cheese

INGREDIENTS:

  • 8 oz goat cheese
  • 2 tsp finely chopped rosemary
  • salt and pepper
  • 24 fresh figs
  • 1/4 pound sliced prosciutto
  • 6 long sprigs rosemary
  • olive oil

DIRECTIONS:

  1. Combine cheese, rosemary, salt and pepper. Make a small slit in bottom or side of each fig and pipe or stuff cheese mixture into figs.
  2. Wrap strips of prosciutto around each fig and skewer 4 figs per rosemary twig. Brush with oil, season.
  3. Place figs on hot grill and grill until cheese starts to ooze, about 6 minutes.
