Grilled Nugget Potatoes
Fire up the barbequel
3 pounds nugget potatoes
6 tablespoons olive oil
2 cloves garlic - minced
1/2 cup thinly slicked green onions or shallots
2 tablespoons chopped parsley
1 tablespoon chopped oregano or thyme (fresh)
1/2 cup chopped fresh basil
4 tablespoons freshly grated Parmesan cheese
YIELD: roughly 12 portions

- Slice the potatoes in half lengthwise and place them in a large pot of boiling salted water. Simmer for 6 to 10 minutes depending on the size of the potatoes. Drain and let cool until you are ready to barbeque.
- Heat your barbecue to high. Toss potatoes with 2 tablespoons of olive oil. Grill the potatoes cut side down until well marked. Remove from the grill and toss with the remaining ingredients. Season to taste and serve.
