Grilled Nugget Potatoes

INGREDIENTS:

  • 3 pounds nugget potatoes
  • 6 tablespoons olive oil
  • 2 cloves garlic - minced
  • 1/2 cup thinly sliced green onions or shallots
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped oregano or thyme (fresh)
  • 1/2 cup chopped fresh basil
  • 4 tablespoons freshly grated Parmesan cheese

DIRECTIONS:

  1. Slice the potatoes in half lengthwise and place them in a large pot of boiling salted water. Simmer for 6 to 10 minutes depending on the size of the potatoes. Drain and let cool until you are ready to barbeque.
  2. Heat your barbecue to high. Toss potatoes with 2 tablespoons of olive oil. Grill the potatoes cut side down until well marked. Remove from the grill and toss with the remaining ingredients. Season to taste and serve.
