Marinated Mozzarella and Fig Slices

INGREDIENTS:
- 5 ounces buffalo mozzarella, regular mozzarella or bocconcini
- 5-6 firm figs
- 6-8 mint leaves
- salt and freshly ground black pepper
- Marinade:
- 2 tablespoons walnut oil
- 1 tablespoon sunflower oil
- 3 tablespoons lemon juice
- 1 garlic clove, peeled and crushed
DIRECTIONS:
- Slice the cheese to about 1/8 inch thickness. Beat the marinade ingredients together in a bowl and season to taste. Coat the cheese slices in marinade, cover and cool for 2-8 hours.
- Just before serving, take the cheese out of the refrigerator. Trim both ends of the figs and slice each one in 3-4 round slices. Arrange the cheese and fig slices on a round platter.
- Dribble the marinade all over the slices and scatter the mint on top.
