Marinated Mozzarella and Fig Slices

A mediterranean favourite.

INGREDIENTS:

  • 5 ounces buffalo mozzarella, regular mozzarella or bocconcini
  • 5-6 firm figs
  • 6-8 mint leaves
  • salt and freshly ground black pepper
  • Marinade:
  • 2 tablespoons walnut oil
  • 1 tablespoon sunflower oil
  • 3 tablespoons lemon juice
  • 1 garlic clove, peeled and crushed

DIRECTIONS:

  1. Slice the cheese to about 1/8 inch thickness. Beat the marinade ingredients together in a bowl and season to taste. Coat the cheese slices in marinade, cover and cool for 2-8 hours.
  2. Just before serving, take the cheese out of the refrigerator. Trim both ends of the figs and slice each one in 3-4 round slices. Arrange the cheese and fig slices on a round platter.
  3. Dribble the marinade all over the slices and scatter the mint on top.
