Balsamic Cherry Crostinis

British Columbia summer bounty

INGREDIENTS:
Smoked Cheddar Spread:
125 gm cream cheese, at room temperature
1 cup smoked cheddar, grated
1 Tbsp minced shallot
1 clove garlic, minced
1 tsp Worcestershire

Cherries:
1 cup BC cherries
2 Tbsp Balsamic vinegar,
1 Tbsp olive oil
Salt and Pepper to taste

Crostini:
Assemble thinly toasted ciabatta rounds, or a collection of whole grain crackers, fruit/nut crisps, etc.

YIELD: serves 4, two crostinis each

DIRECTIONS:

  1. Smoked Cheddar Spread
    Mix the cream cheese, smoked cheddar, minced shallot, garlic, and Worcestershire in a bowl with a fork, or use the food processor.
  2. Cherries
    Wash, pit, and halve cherries. Toss with balsamic vinegar, olive oil and salt and pepper.
  3. Crostini
    Assemble thinly toasted ciabatta rounds, or a collection of whole grain crackers, fruit/nut crisps, etc. Spread crostini with cheese spread and top with cherry halves.
