Balsamic Cherry Crostinis

INGREDIENTS:

  • Smoked Cheddar Spread:
  • 125 gm cream cheese, at room temperature
  • 1 cup smoked cheddar, grated
  • 1 Tbsp minced shallot
  • 1 clove garlic, minced
  • 1 tsp Worcestershire
  • Cherries:
  • 1 cup BC cherries or in spring and fall, blackberries or raspberries
  • 2 Tbsp Balsamic vinegar,
  • 1 Tbsp olive oil
  • Salt and Pepper to taste
  • Crostini:
  • Assemble thinly cut, toasted ciabatta rounds, or a collection of whole grain crackers, fruit/nut crisps, etc.

DIRECTIONS:

  1. Smoked Cheddar Spread
    Mix the cream cheese, smoked cheddar, minced shallot, garlic, and Worcestershire in a bowl with a fork, or use the food processor.
  2. Cherries
    Wash, pit, and halve cherries. Toss with balsamic vinegar, olive oil and salt and pepper.
  3. Crostini
    Assemble ciabatta rounds. Spread crostini with cheese spread and top with cherry halves.
