Sobrasada Tartlets with Honey and Pine Nuts

You pretty much have to go to Minorca to get Sobrassada, so I suggest substituting Spanish Chorizo or any sausage made with paprika.

1 tablespoon olive oil
40 grams pine nuts
100 grams spicy sausage (chopped very finely if not already a paste)
1 tablespoon liquid honey
8 mini-tarts - I used mini fillo tarts

YIELD: serves 8 as an appetizer

  1. Heat the oil in a small skillet. Add the pine nuts and lightly toast them. Add the spicy sausage and stir for a minute. Add the honey and mix everything together. Stir until honey is melted in. Remove from stove and and fill tarts with mixture. Serve immediately.
