Cowboy Joes

An easy to make, South Western style dinner. Contrary to similar published recipes, this one uses plain beans, not sugar added ones and no BBQ sauce which is also often sugar laden. So this one is genuine cowboy friendly and more or less kid friendly too.

INGREDIENTS:

  • 1-2 tablespoons extra-virgin olive oil and/or butter
  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 diced red bell pepper
  • 1 diced yellow bell pepper
  • 3 cloves garlic, peeled and sliced
  • 1 (14 1/2 ounce) can diced or fire roasted tomatoes with juice
  • 2 tbsp tomato paste
  • 1 (14 1/2 ounce) can cannellini, great northern or pinto beans (drained)
  • 2 tablespoons red wine vinegar
  • 3 tablespoons Worcestershire sauce
  • 1 tsp salt and freshly ground pepper to taste
  • 2 teaspoons chili powder ( to taste)
  • 1/2 teaspoon dried oregano
  • 5 - 10 dashes hot pepper sauce ( to taste)
  • 4 crusty rolls or hamburger buns, split, toasted, and lightly buttered
  • 4-6 tomato slices
  • Garnish: cheddar cheese and dill pickles

DIRECTIONS:

  1. Heat a large skillet over medium-high heat. Add oil/butter, onion, and meat to the pan. Spread the meat around the pan and begin to break it up. When the meat has browned, add the garlic, diced tomatoes, tomato paste, beans, red peppers, and yellow peppers to the skillet.
  2. Reduce heat to medium. Add the red wine vinegar, oregano, Worcestershire sauce and cook for 5 minutes Reduce heat to simmer and cook 20 minutes longer.
  3. Using a large spoon, pile the mixture onto toasted, buttered bun halves. Serve with the sliced tomatoes seasoned with salt, cheddar and dill pickles.
