Smokey Chile Con Carne

INGREDIENTS:
- 2 tbsp olive oil
- 2-4 cloves of garlic, minced
- 2 small or 1 large onions, chopped
- 2 stalks sliced celery
- 3 bell peppers, green, red, yellow, chopped
- 1/4 lb. mushrooms, sliced
- 11/2 - 2 lbs lean ground beef
- 3 cans beans, drained, black, kidney, romano
- 2 28oz. cans of tomatoes (diced or whole)
- 1 can tomato paste or tomato sauce
- 2 tsp. chili powder (regular or chipotle)
- 1 tsp. ground cumim
- 2 tsp. dried oregano
- 1 1/2 tsp. smoked paprika
- 1 tsp thyme
- 1 tsp. salt
- 1/2 tsp. cayenne
- 1 tsp. Worcestershire sauce
- 1 cup soup stock or beer
DIRECTIONS:
- Sauté the vegetables in the olive oil, starting with the onion and garlic. Add the ground beef. Add in the beans, tomatoes, and spices and simmer uncovered 45 minutes at least.
- Serve with garlic bread or tostadas corn chips and cheddar cheese.
