Pizza Dough

This dough can be ready to bake in only 25 minutes.

INGREDIENTS:
3/4 cup whole grain or whole wheat flour
3/4 cup 00 Italian flour or all purpose flour
1 pkg instant yeast (2 1/4 teaspoons)
3/4 teaspoon fine salt
1/2 teaspoon granulated or brown sugar
2 tablespoons olive oil
3/4 cup water at 110 degrees F. ( use an instant read thermometer such as a Thermapen)
YIELD: Enough dough for one 12 inch pizza

DIRECTIONS:
  1. In the bowl of a food processor, combine both your flours, yeast, olive oil, salt, and sugar. Turn the machine on and off several times to mix the ingredients. With the processor motor running, slowly add enough of the hot water for the mixture to form a sticky ball. If the dough seems too dry, add a tablespoon of water at a time till it gets sticky. If too wet, add 2 tablespoons of flour at a time.
  2. Process until the dough forms a ball. Transfer the ball of dough to a floured surface and knead for about 2 minutes. Cover the dough with a tea towel and let it rest and rise for about 20 minutes.
  3. Punch the dough down and roll it out into a 12 inch circle.
  4. You may find it advantageous to pre-bake it about 5 minutes before adding your toppings.
