Cantucci

The classic Italian dessert. Served with Vinsanto.

INGREDIENTS:

  • 175 gr. All purpose flour
  • 100 gr. white sugar
  • 70 gr. peeled almonds, toasted
  • 4 gr. bakers yeast
  • 2 eggs for dough
  • 1 lightly beaten egg

DIRECTIONS:

  1. Set a rack in the middle level of the oven and heat to 350 degrees F.
  2. In a bowl combine the flour, sugar and eggs. Stir well to mix, then dump onto a working surface and gently knead.
  3. Add the almonds to the dough and continue kneading, add a little more flour as you go.
  4. Divide your dough into Make two balls and then form each ball into a sausage roll shape. Paint the rolls with the lightly beaten egg.
  5. Press down gently with the palm of your hand to flatten the logs.
  6. Bake for about 25 to 30 minutes, or until the logs are well risen and have also spread to about double their original size. The logs are done when pressed with fingertip they feel firm.
  7. Place the pan on a rack and let the logs cool completely.
  8. Reset the oven racks in the upper and lower thirds but leave the temperature at 350 degrees. Place one of the cooled logs on a cutting board and cut it diagonally into slices 1/3-inch thick. Arr
