Four Cheeses Pizza - Pizza au quatre fromagii

INGREDIENTS:

  • Tomato sauce - italian | mireilles | marinara
  • Generally speaking one should start with Mozzarella and Parmesan. Then add any two of Tallegio, Fontina, Gorgonzola, Blue, Bocconcini, or Ricotta
  • 1 small onion, finely chopped
  • 12 olives: green, black, stuffed or not, but should be de-pitted, and cut in half.
  • Two handfuls of chopped fresh basil, oregano, or thyme leaves.

DIRECTIONS:

  1. Heat your oven as to broiling temperature, somewhere between 475 and 575 degrees F.

    Place the bare crust in the oven and bake for 3 to 5 minutes. Remove.

    Place ingredients on the crust, sauce first of course, then the onion and olives, and finally the cheeses.
  2. Place the pizza in the oven and bake for 6 to 12 minutes. Let cool for 2 minutes, and serve.
