Pizza Capricciosa
Pizza capricciosa is one of the classic Italian pizza recipes. It is prepared with mozzarella, Italian baked ham, mushroom, artichoke and tomato sauce. Types of edible mushrooms used may include cremini, white mushrooms, and others. Some versions may also use prosciutto, olives, and/or basil leaves

INGREDIENTS:
- 1 Pizza crust (30 cm)
- 3/4 cup tomato sauce
- 1/2 cup mozzarella cheese
- 1/2 cup diced, smoked caciocavallo cheese (optional)
- 1/2 cup mushrooms, sliced
- 1/2 cup prosciutto, black forest or serrano ham, cut into 1/2 inch pieces
- 1/3 cup olives, black or green, de-pitted and sliced in half
- 2 filets of anchovy, finely chopped
- 2 canned artichokes (optional)
- 1 tsp. dried oregano
- 3 tbl. olive oil
DIRECTIONS:
- Prepare or purchase a 30 cm thin crust.
- Top with tomato sauce, ham, anchovies, smoked Caciocavallo cheese, artichokes, mushrooms, olives, garlic, and oregano. Preheat the oven to 500°F / 250°C.
- Stretch the pizza dough to cover a (30 cm) diameter oiled pizza pan.
- Top with tomatoes, ham, anchovies, smoked Caciocavallo cheese, artichokes, mushrooms, olives, garlic, and oregano. Drizzle with 1 Tbsp. olive oil.
- Bake in a 500-degree oven for 12 minutes. Watch for burning in the last few minutes. Remove from the oven and drizzle with the rest of the olive oil.
