Classic Vinaigrette

INGREDIENTS:

  • 2 to 3 tablespoons wine vinegar (white, red, or balsamic)
  • 2/3 cup extra virgin olive oil
  • Kosher salt and freshly ground black pepper
  • Optional Additions
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh basil, tarragon, mint or parsley
  • 2 tablespoons shallot, minced
  • 2 teaspoons Dijon mustard
  • 1 tablespoon water
  • 4 tbsp goat cheese

DIRECTIONS:

  1. When making vinaigrette always start with the vinegar (optional mustard) and salt whisked in your mixing bowl. Then add the oil and whisk it in. Add the herbs last.
  2. Taste and re-season with salt and pepper.Test by dipping a spoon or a leaf into the dressing. You are checking for acid and salt balance.
  3. Vinaigrette will keep in the refrigerator for up to 2 weeks.
