Classic Vinaigrette

INGREDIENTS:
- 2 to 3 tablespoons wine vinegar (white, red, or balsamic)
- 2/3 cup extra virgin olive oil
- Kosher salt and freshly ground black pepper
- Optional Additions
- 1 clove garlic, minced
- 2 tablespoons chopped fresh basil, tarragon, mint or parsley
- 2 tablespoons shallot, minced
- 2 teaspoons Dijon mustard
- 1 tablespoon water
- 4 tbsp goat cheese
DIRECTIONS:
- When making vinaigrette always start with the vinegar (optional mustard) and salt whisked in your mixing bowl. Then add the oil and whisk it in. Add the herbs last.
- Taste and re-season with salt and pepper.Test by dipping a spoon or a leaf into the dressing. You are checking for acid and salt balance.
- Vinaigrette will keep in the refrigerator for up to 2 weeks.
