Creamy Cucumber Salad
You may also add a few very thin onion slices

INGREDIENTS:
- 1 English cucumber, sliced very thin, possibly with a mandolin
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon olive oil
- 2 cloves garlic, chopped finely
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh dill, plus more for garnish (or 1 tablespoon dry dill)
- 1/4 cup very thinly sliced red onion, soaked in water for 10 minutes and drained
- Kosher salt and ground pepper
DIRECTIONS:
- In a medium bowl, combine sour cream/yoghurt, lemon juice, olive oil and dill. Season with salt and pepper, and whisk well to combine.
- Add cucumbers, onion, and toss to coat. Garnish with more dill, if desired. Serve, or refrigerate covered, up to 4 hours.
