Creamy Cucumber Salad

You may also add a few very thin onion slices

INGREDIENTS:

  • 1 English cucumber, sliced very thin, possibly with a mandolin
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon olive oil
  • 2 cloves garlic, chopped finely
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh dill, plus more for garnish (or 1 tablespoon dry dill)
  • 1/4 cup very thinly sliced red onion, soaked in water for 10 minutes and drained
  • Kosher salt and ground pepper

DIRECTIONS:

  1. In a medium bowl, combine sour cream/yoghurt, lemon juice, olive oil and dill. Season with salt and pepper, and whisk well to combine.
  2. Add cucumbers, and toss to coat. Garnish with more dill, if desired. Serve, or refrigerate covered, up to 4 hours.
