Cabbage and Apple Salad

Crunchy, chilly and cheesy.

INGREDIENTS:

  • 1/2 small head of green cabbage
  • 1 granny smith apple, cut into matchsticks
  • 1/2 teaspoon caraway seeds
  • 1 cup torn kale leaves
  • 8 slices of Comox Brie
  • 2 tablespoons fresh lemon juice
  • 2 tablespoon olive oil
  • 1/2 teaspoon fleur-de-sel or kosher salt
  • 1/2 teaspoon freshly ground pepper

DIRECTIONS:

  1. Toast the caraway seeds in a small dry skillet, tossing constantly until fragrant, about 1 minute. Let cool.
  2. Toss cabbage, apple, kale, and caraway seeds with the lemon juice and oil in a large bowl. Season with salt and pepper. Arrange the cheese slices on the middle top of each serving.
