Cabbage and Apple Salad

INGREDIENTS:
- 1/2 small head of green cabbage
- 1 granny smith apple, cut into matchsticks
- 1/2 teaspoon caraway seeds
- 1 cup torn kale leaves
- 8 slices of Comox Brie
- 2 tablespoons fresh lemon juice
- 2 tablespoon olive oil
- 1/2 teaspoon fleur-de-sel or kosher salt
- 1/2 teaspoon freshly ground pepper
DIRECTIONS:
- Toast the caraway seeds in a small dry skillet, tossing constantly until fragrant, about 1 minute. Let cool.
- Toss cabbage, apple, kale, and caraway seeds with the lemon juice and oil in a large bowl. Season with salt and pepper. Arrange the cheese slices on the middle top of each serving.
