Watermelon and Feta Salad

INGREDIENTS:
- 1/2 to 3/4 of a small round watermelon, cubed
- 1 mango, or 1 orange, cubed
- 1/4 red onion, very thinly sliced and broken into rings
- 6 ounces feta cheese, cut into 1/4 inch cubes
- 2 tbl. fresh parsley, finely chopped
- 2 tablespoons olive oil
- 2 tsp. lemon juice
- 1/2 cup of basil leaves, torn if large
- Salt and freshly ground pepper
DIRECTIONS:
- On a serving platter, or individual plates, arrange and melon, fruit, onions and feta cheese. Drizzle with the olive oil and lemon juice. Season with salt and pepper and serve. Can be prepared a few hours ahead and stored in the fridge.
