Shallot Vinaigrette

Shallots are the prince of the onion family!
“Waiter, waiter, could I have some more of these small, sweet tasting onions?” “Sorry sir, that’s shallot”

INGREDIENTS:

  • 1/3 cup minced shallot
  • 2 tablespoons sherry-wine vinegar
  • 2 tablespoons fresh lemon juice
  • Grated zest of one lemon
  • Salt
  • 1/3 cup extra-virgin olive oil

DIRECTIONS:

  1. Place the shallot, vinegar, lemon juice, lemon zest and salt in a jar. Cover and shake to dissolve the salt. Add the oil and shake to blend. Taste for seasoning and oil/ vinegar proportion. Last for a week or so in the refrigerator. Shake again at serving time to create a thick emulsion.
