Northwoods Red Cabbage Slaw

Sweet and sour cabbage slaw served at North Woods Inn, California.

INGREDIENTS:

  • 1 head Red Cabbage
  • 1/2 cup sunflower oil
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp crushed garlic or garlic powder
  • 1/4 onion, finely chopped

DIRECTIONS:

  1. Shred half of the cabbage finely and the other half coarsely. Place cabbage in a large bowl.
  2. Whisk together the oils, vinegar, sugar, salt, pepper, and garlic. Toss the dressing with the shredded cabbage. Cover the bowl and refrigerate for 2 to 5 days until flavours meld.
  3. This red cabbage salad and a green salad with a creamy blue cheese dressing are served together as a duo along with garlic cheese bread at the North Woods Inn.
