Green Beans with Feta and Sun dried Tomatoes

INGREDIENTS:
- 1 pound of young, small green beans
- 4 ounces of sun dried tomatoes in oil, drained and sliced
- 5/8 cup of shelled walnuts or almonds
- 6 tablespoons of olive oil
- 4 teaspoons of freshly squeezed lemon juice
- 1 cup feta cheese, crumbled or diced
- 2 large Mozzarella balls, drained and cut into chunks
- salt and pepper
DIRECTIONS:
- Trim 1/4 inch from both ends of the beans, then cook the beans in a large saucepan of boiling salted water for about 5 minutes, until al dente. Drain well and place in a large bowl.
- Lightly toss the hot beans with the sun-dried tomatoes, nuts, olive oil and lemon juice. Season with salt and pepper and allow to cool.
- Once the beans have cooled, crumble in the feta and gently mix in the Mozzarella. Serve immediately.
