Green Beans with Feta and Sun dried Tomatoes

This salad features the colours of the Italian Flag.

INGREDIENTS:

  • 1 pound of young, small green beans
  • 4 ounces of sun dried tomatoes in oil, drained and sliced
  • 5/8 cup of shelled walnuts or almonds
  • 6 tablespoons of olive oil
  • 4 teaspoons of freshly squeezed lemon juice
  • 1 cup feta cheese, crumbled or diced
  • 2 large Mozzarella balls, drained and cut into chunks
  • salt and pepper

DIRECTIONS:

  1. Trim 1/4 inch from both ends of the beans, then cook the beans in a large saucepan of boiling salted water for about 5 minutes, until al dente. Drain well and place in a large bowl.
  2. Lightly toss the hot beans with the sun-dried tomatoes, nuts, olive oil and lemon juice. Season with salt and pepper and allow to cool.
  3. Once the beans have cooled, crumble in the feta and gently mix in the Mozzarella. Serve immediately.
