Curried Chickpea Salad with fruit, nuts, and seeds

INGREDIENTS:

  • - 2 cups cooked chickpeas
  • - ½ cup raisins
  • - ½ cup dried apricots, sliced
  • - ½ cup coarsely chopped toasted cashews
  • - ½ cup shredded coconut
  • - ¼ cup sunflower seeds
  • - ¼ cup pumpkin seeds

    Dressing:

    - ½ cup mayonnaise

  • - ½ tbsp mild Indian curry powder
  • - 1 tsp honey
  • - 1 tbsp lemon juice
  • - 2 tbsp chopped fresh cilantro
  • - 2 green onions, thinly sliced

DIRECTIONS:

  1. Combine chickpeas with raisins, apricots, cashews, coconut, sunflower seeds and pumpkin seeds.
    Whisk mayonnaise with curry paste, honey and lemon juice.

    Combine dressing with chick peas. Sprinkle with cilantro and green onions.
