Buffalo Chicken Rolls

INGREDIENTS:
- 1 recipe pizza dough Susan's basic pizza dough
- 1 large onion, finely chopped
- 2 stalks celery, finely chopped
- 1 pound boneless, skinless chicken breast, filet or thigh
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 to 6 tablespoons Cholula sauce or your personal favorite buffalo sauce
- 2 cups shredded medium or old cheddar
- 1 250 gram brick of cream cheese, cut into 1 inch cubes
DIRECTIONS:
- Saute chopped onion and celery in butter and olive oil over medium heat. Once transparent, add chopped chicken. When chicken is done, add Buffalo Sauce and heat for 5 minutes. Add the cream cheese and stir until it is incorporated. Remove from heat and set aside.
- Heat oven to 400. Spray two muffin pans with non-stick spray. Divide dough in half. Roll each half into a large rectangle roughly 1/4 inch in thickness.
- Spread chicken mixture and cheese evenly across each piece of rolled out dough. Starting from long side of dough, begin rolling the dough up like a cinnamon roll. Pinch ends when done. Slice into 2 inch rolls.
- Place in muffin pans. Bake for 15-18 minutes, or until cheese is bubbling and dough is lightly browned. Serve and enjoy!
