Oysters Baked in Garlic and Sherry

INGREDIENTS:

  • 500 ml pre-shucked oysters, from North Cove Oysters, Ladysmith, B.C.
  • 1 cup unsalted butter
  • 1/3 to 1/2 cup sherry. We use Nutty Solera
  • 4 garlic cloves, minced
  • 1/4 teaspoon sea salt
  • 2 teaspoons, freshly cracked peppeer
  • 6 cups bread crumbs

DIRECTIONS:

  1. Preheat the oven to 400 degrees F. Place the oysters in a single layer in a pre-sprayed 9 by 13 inch baking dish.
    In a sauce/fry-pan over low heat, melt the butter. Add the sherry, garlic, salt and pepper. Add the bread crumbs and toss until well coated. Spread the crumb mixture evenly over the oysters. Bake for 20 minutes in the middle of the oven. Turn on the broiler and broil another 3 minutes. Sere and enjoy.
