Roasted Garlic Cauliflower

A most delicious oven-roasted cauliflower recipe. The florets are drizzled in oil and butter and seasoned to perfection.

INGREDIENTS:

  • 2 tablespoons minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1 head of cauliflower (or broccoli or broccolini for that matter)
  • 1/3 cup Parmesan cheese
  • salt and black pepper to taste
  • 2 tablespoons lemon juice

DIRECTIONS:

  1. Preheat the oven to 425 degrees F. Spray/grease a large casserole dish.
  2. Cut cauliflower into florets. Place the olive oil and garlic in a large resealable bag. Add cauliflower and shake to mix. Add lemon juice. Pour into the prepared casserole dish. Season with salt and pepper to taste.
  3. Bake for 15 to 20 minutes, stirring halfway through. Top with Parmesan cheese and broil for 3 to 5 minutes until golden brown.
