Scrambled Eggs with spinach and Chicken-Apple Sausage
As long as you have the Spinach, cheese and the Sausages on hand, it is a breeze.

INGREDIENTS:
- 4 Eggs
- 1/2 cup fresh or frozen spinach, chopped into 1/2 inch slices
- 2 links of chicken sausage with apples (source at Whole Foods)
- 1/4 to 1/2 cup grated Parmesan or any hard cheese
- 2 tablespoons butter
- salt
- black pepper
DIRECTIONS:
- Cut the sausages into bite sized pieces and fry them with a bit of butter. Set aside.
- Break the eggs into a bowl, add 2 tablespoons water, the chopped spinach and the cheese. Whisk for about a minute until combined
- Re-charge the frypan with butter, wait till it melts a bit and then pour the egg mixture into the pan. Let it sit for a minute and then swirl it around for all of 1 1/2 minutes. Plate along with the sausages and serve.
- Serve with buttered toast and a small fruit bowl.
