Cherry Snowballs

A Christmas delight

INGREDIENTS:

  • 1 cup butter .
  • 1/4 cup icing sugar
  • 1 tsp. vanilla
  • 2 cups sifted all purpose flour
  • 1 cup finely chopped almonds
  • 1/4 tsp. salt
  • 1/2 lb. candied cherries
  • 1/2 tsp. almond extract

DIRECTIONS:

  1. Heat oven to 325 degrees, 300 degrees for a convection oven.
  2. Cream butter and sugar until fluffy. Add remaining ingredients except the cherries, mixing well with your hands
  3. Flatten about a teaspoon full of dough in the palm of your hand. and place on a cookie sheet. Repeat until dough is used up. Place a cherry on each circle of dough. Cover each cherry by pinching dough up and around it. Roll between hands to smooth out.
  4. Bake until light golden yellow. Remove from oven. While still hot, roll the cookies in finely granulated sugar such as berry sugar.
