Cherry Snowballs
A Christmas delight

INGREDIENTS:
- 1 cup butter .
- 1/4 cup icing sugar
- 1 tsp. vanilla
- 2 cups sifted all purpose flour
- 1 cup finely chopped almonds
- 1/4 tsp. salt
- 1/2 lb. candied cherries
- 1/2 tsp. almond extract
DIRECTIONS:
- Heat oven to 325 degrees, 300 degrees for a convection oven.
- Cream butter and sugar until fluffy. Add remaining ingredients except the cherries, mixing well with your hands
- Flatten about a teaspoon full of dough in the palm of your hand. and place on a cookie sheet. Repeat until dough is used up. Place a cherry on each circle of dough. Cover each cherry by pinching dough up and around it. Roll between hands to smooth out.
- Bake until light golden yellow. Remove from oven. While still hot, roll the cookies in finely granulated sugar such as berry sugar.
