Pizza - Italian Sausage and Arugula
Thin crust, Naples style pizza

INGREDIENTS:
- 1 batch of your favourite pizza dough
- ½ lb. uncooked hot (or mild) Italian sausage
- ¼ cup chopped yellow or sweet onion
- 2 cloves garlic, sliced
- ¼ tsp. red pepper flakes
- 28 ounces canned crushed tomatoes (or give a few fresh tomatoes a quick whirl in a food processor)
- salt and pepper to taste
- 1 tub 2 cups shredded mozzarella cheese
- 1 cup fresh arugula
DIRECTIONS:
- Preheat oven to 480 degrees F.
- Heat a medium saucepan over high heat. Add sausage and cook, breaking it up into chunks with a wooden spoon as it cooks. Cook sausage, stirring occasionally until it is cooked through, about 8 minutes.
- Remove cooked sausage to a separate bowl and return saucepan to the stove over medium heat.
- Add onion and garlic to saucepan and sauté until onion is translucent about 3 minutes.
- Add red pepper flakes, crushed tomatoes, salt, and pepper to the saucepan and stir to combine. Bring sauce to a simmer, then remove from heat and set aside.
- Press pizza dough into a pizza pan. Top dough with tomato sauce, followed by the mozzarella, and finally, top with the cooked Italian sausage.
- Bake pizza for 12-15 minutes until cheese is melted and crust is lightly browned. (exact bake time will vary with oven and ingredients)
- Top baked pizza with fresh arugula. Give it a rough chop and scatter it over the top
- Slice and serve immediately.
