Chickpea Salad

A Spanish bean salad. Very similar to the Italian White bean salad.

INGREDIENTS:

  • 14 oz. canned chickpeas
  • 4 red bell peppers, roasted
  • a bunch of green onions or 2 shallots or 1/2 a red onion
  • 1-2 cloves garlic
  • 1-2 large tomatoes
  • ½ cucumber, peeled, halved, seeded, and chopped
  • fresh parsely
  • extra virgin olive oil
  • white wine vinegar and/or lemon juice
  • salt and pepper
  • 50 grams cured ham

DIRECTIONS:

  1. Drain and rinse the chickpeas. Cut the tomato and cucumber into small cubes and place in a bowl. Add the red peppers to the tomato.
  2. Cut the cured ham into small squares and add to the bowl. Dress with olive oil and white wine vinegar.
    Season with salt and pepper.
  3. Add the chickpeas to the salad mixture.
  4. Garnish with fresh parsley.
  5. Toss to coat well. Let stand for at least 15 minutes to allow the flavors to blend.
