Peppernuts - Ostpreussische Pfeffernüsse

Everyone loves them, especially the kids.

INGREDIENTS:

  • 2 ½ lbs. flour
  • 2 tsp. cardamon
  • 1 lb sugar
  • 1 tsp. cinnamon
  • 1 lb honey
  • ½ tsp. ginger
  • ½ lb lard
  • ½ tsp. nutmeg
  • Peel of one lemon - finely grated
  • ½ tsp. cloves
  • ½ cup sour cream
  • ½ tsp. star anise seed
  • 3 tsp. baking soda
  • ½ tsp. allspice

DIRECTIONS:

  1. Bring to a boil the lard, sugar and honey.  Let cool to barely luke warm.
    Mix flour with spices.
  2. Dissolve baking soda in the sour cream.
  3. In a large bowl mix all ingredients. Knead well.
  4. Immediately roll into finger-thick rolls. Cover with saran wrap while cutting 'nuts'.
  5. Place on lightly greased sheets and bake for about 10 minutes in a 350 to 375 degree oven
