Peppernuts - Ostpreussische Pfeffernüsse

INGREDIENTS:
- 2 ½ lbs. flour
- 2 tsp. cardamon
- 1 lb sugar
- 1 tsp. cinnamon
- 1 lb honey
- ½ tsp. ginger
- ½ lb lard
- ½ tsp. nutmeg
- Peel of one lemon - finely grated
- ½ tsp. cloves
- ½ cup sour cream
- ½ tsp. star anise seed
- 3 tsp. baking soda
- ½ tsp. allspice
DIRECTIONS:

Bring to a boil the lard, sugar and honey. Let cool to barely luke warm.
Mix flour with spices. - Dissolve baking soda in the sour cream.
- In a large bowl mix all ingredients. Knead well.
- Immediately roll into finger-thick rolls. Cover with saran wrap while cutting 'nuts'.
- Place on lightly greased sheets and bake for about 10 minutes in a 350 to 375 degree oven
