Orange Parsnips (or Carrots)

INGREDIENTS:
6 parsnips 3-4 tbsp orange juice concentrate ½ tsp salt

2 tbsp butter

1/3 cup brown sugar

DIRECTIONS:

  1. Peel parsnips and slice lengthwise in 3” sections. Butter a baking dish and arrange the parsnips. On top of parsnips place the orange juice concentrate, salt, butter, and brown sugar. Cover with aluminium foil. Bake for 1 hr in a 350 deg. oven, stirring once halfway through. Check to see if parsnips are tender.
