Oldtime scalloped potatoes

INGREDIENTS:

  • 4 cups thinly slice, pared raw potatoes
  • 2/3 cup minced raw onions
  • 2 tbsp flour
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 tbsp butter
  • 1 ½ cups scalded milk
  • paprika

DIRECTIONS:

  1. Heat oven to 375°F. Arrange a layer of potatoes in a greased 8 cup casserole dish. Cover with some onions. Sprinkle with some of the combined flour, salt, and pepper. Dot with some butter. Repeat until all are used, ending with butter. Pour milk over everything, and sprinkle with paprika.
  2. Bake, covered, for 45 minutes. Uncover and bake for 15 minutes longer or until tender. Don’t over-bake this dish too much as if it burns it will taste bitter.
