Apple Rhubarb Crisp
Nothing says spring like rhubarb. Quick-to-prepare, single-serving fruit crisps like this one are an easy way to get dessert on the table anytime.

INGREDIENTS:
- Fruit :
- 1 cup (12 oz) half-inch sliced rhubarb
- 5-6 granny smith apples, peeled, cut into 1 inch pieces
- 1/2 cup granulated sugar
- 1 tablespoon maple syrup
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- Topping :
- 1/3 cup all-purpose flour
- 1/3 cup whole-wheat flour
- 2/3 cup old-fashioned rolled oats, (not instant)
- 2 tablespoons chopped pecans
- 6 tablespoons unsalted butter, melted
- 1/4 cup packed dark brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt

Crumble :
Whisk oats, all-purpose flour, whole wheat flour, brown sugar, cinnamon, pecans, and salt in a medium bowl. Using your fingertips, work in butter until no dry spots remain and mixture holds together when squeezed. Cover and chill while you prepare the filling. -
Filling and Assembly :
Preheat oven to 350°. Butter a shallow 2-qt. baking dish. Toss apples, rhubarb, maple syrup, granulated sugar, lemon juice, and vanilla in a large bowl; transfer to baking dish. Scatter crumble over fruit, breaking up any large pieces. - Place dish on a foil-lined rimmed baking sheet and bake until crumble is golden brown, juices are bubbling, and apples are tender, 35–50 minutes. Do Ahead: Unbaked crumble can be assembled 2 days ahead. Cover and chill.
