Oma's Apfelkuchen / Pflaumenkuchen
This also makes a good Piroshki dough if you cut the pastry into squares.

INGREDIENTS:
- Pastry :
- 3 cups All purpose flour
- 3/4 cup butter
- 2 tsp. baking powder
- 1/2 tst. salt
- 1 egg
- 1 cup whipping cream, beaten together with the egg
- 3 tablespoons minute tapioca
- 1/2 cup sugar
- Fruit :
- Enough apples or halved plums, peaches , apricots, rhubarb, sour cherries or mangoes to cover the rolled out dough
- Crumb Topping :
- 1 1/2 cups flour
- 3/4 cup sugar
- 1 cup butter
DIRECTIONS:
- Heat the oven to 350 degrees, 325 for a convection oven.
- Pastry: combine the flour and butter in a food processor. Add the rest of the pastry ingredients. Mix a few seconds. Roll out on a floured board and place in a buttered rimmed roasting pan about 16 by 12 inches in size.
- Sprinkle the rolled out pastry with 3 tablespoons minute tapioca or flour.
- Fruit: Core and slice the apples or de-pit and halve the plums, etc.
- Crumb Topping: Mix flour and butter and sugar well in the food processor. Put on a well-floured counter and make crumbs out of the mixture
- Assembly: Put the fruit on the pastry and sprinkle with 1/2 cup of extra sugar. Then cover with the crumb mixture.Then sprinkle with sliced almonds
- Baking: Place in the heated oven and bake for about one hour. Check at 45 minutes to make sure the crumbs are not getting too dark.
