Grilled Poblano Pepper and Mango Quesadillas

Mexican delight
try this with  Salsa Verde

1 mango - peeled and diced
1 poblano pepper - stemmed, seeded, and diced
16 flour tortillas
1 (8 ounce) package cream cheese
1/4 cup butter, melted

YIELD: makes 8 servings

  1. Preheat grill for medium heat.

    Spread a tortilla with a thin layer of cream cheese, using about 2 tablespoons cream cheese. Sprinkle mango and poblano peppers over cheese, and press another tortilla on top. Repeat with remaining mango, pepper, cream cheese, and tortillas. Brush butter over the outside of each quesadilla, top and bottom.

    Grill quesadillas over medium heat for about 5 minutes each side, or until golden brown. Remove from grill, and slice into wedges. Serve warm.
