Grilled Poblano Pepper and Mango Quesadillas

A Mexican delight.

INGREDIENTS:

  • 1 mango - peeled and diced
  • 1 poblano pepper - stemmed, seeded, and diced
  • 6 flour tortillas
  • 1 (8 ounce) package cream cheese
  • 1/4 cup butter, melted

DIRECTIONS:

  1. Preheat grill for medium heat.
  2. Spread a tortilla with a layer of cream cheese, using about 2 tablespoons cream cheese. Sprinkle mango and poblano peppers over cheese, and press another tortilla on top. Repeat with remaining mango, pepper, cream cheese, and tortillas. Brush butter over the outside of each quesadilla, top and bottom.
  3. Grill quesadillas over medium heat for about 5 minutes each side, or until golden brown. Remove from grill, and slice into wedges. Serve warm.
  4. Makes 6 servings.
