Chocolate Mousse

The one and only chocolate mousse you will ever make. Eight ingredients, including 2 ounces sugar, and it’s done. This recipe will impress your guests every single time.

INGREDIENTS:

  • 2 oranges
  • 4 tbsp Cointreau or other orange liqueur
  • 10 oz (285g) dark chocolate, at 60 to 70% cocoa - We used Baker's chocolate
  • 4 oz (100g) butter
  • 6 large eggs, whites and yolks separated
  • 2 oz sugar
  • 2 tbsp orange juice
  • 1 cup whip cream

DIRECTIONS:

  1. Melt chocolate and butter over low-medium heat until smooth. Set aside.
  2. Cut the rind off 1 orange, blanch for 2 minutes and marinate in the Cointreau. Grate the rind off the second orange and beat with the egg yolks and half the sugar.
  3. Mix the chocolate-butter into the eggs, add in the orange juice and liqueur (save the peel and cut into thin strips for decoration). Beat the egg whites with the remaining sugar and fold in.
  4. Beat the whipping cream until firm peaks form and fold into the chocolate mixture.
  5. Pour the mousse into a serving bowl or individual ramekins and let cool in the refrigerator for about 3 hours or overnight before servings.
