Provencal Cod Braised in Tomato Sauce

Delicately braised cod with the Provencal accompaniments of lemon juice, capers, olives, tomatoes, and butter.

INGREDIENTS:

  • 600 g. cod fillet, skin on if possible
  • 800 ml Tomato sauce - italian | mireilles | marinara
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup drained capers
  • 16 pitted black olives
  • 16 pitted green olives
  • 1 tablespoon fresh oregano or 1 teaspoon dried

DIRECTIONS:

  1. Bring out our large skillet with lid. In the skillet, bring your choice of tomato sauce to a boil over high heat. As soon as it boils, reduce the heat to very low and add the cod. Cover and simmer gently until the fish is cooked through, about 6 minutes. Carefully transfer the fish to warm dinner plates. Spoon the sauce over the cod. Season to taste. Garnish with the olives, capers and oregano. For extra flavour, add the zest of the lemon.
