Spinach Salad with Bacon and Mushrooms

As optional extras, try adding a handful of nuts and 1/4 red onion, very thinly sliced

INGREDIENTS:

  • 1/3 bag baby spinach leaves
  • 1-2 Criimini mushrooms per person)
  • 1 rasher bacon per person
  • 1 hardboiled egg
  • Dressing:
  • 1 tsp Dijon mustard
  • ½ cup olive oil
  • 1 tbsp vinegar, add more to taste
  • salt and pepper
  • Whisk, put into a jar, and save the extra dressing.

DIRECTIONS:

  1. Fry the bacon until crisp. Discard the fat. Add the salad dressing to the leaves as required. Add salt and pepper into the salad to taste.
