Spinach Salad with Bacon and Mushrooms
As optional extras, try adding a handful of nuts and 1/4 red onion, very thinly sliced

INGREDIENTS:
- 1/3 bag baby spinach leaves
- 1-2 Criimini mushrooms per person)
- 1 rasher bacon per person
- 1 hardboiled egg
- Dressing:
- 1 tsp Dijon mustard
- ½ cup olive oil
- 1 tbsp vinegar, add more to taste
- salt and pepper
- Whisk, put into a jar, and save the extra dressing.
DIRECTIONS:
- Fry the bacon until crisp. Discard the fat. Add the salad dressing to the leaves as required. Add salt and pepper into the salad to taste.
