Salsa Di Pomodoro (Italian Tomato Sauce)

A really good meatball or pasta sauce recipe.

INGREDIENTS:

  • 2-3 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 (28oz) can of tomatoes with their liquid, puréed
  • ½ tsp brown sugar
  • salt and freshly ground black pepper
  • 1 tbsp tomato paste
  • hot water
  • 3-4 sprigs of fresh basil, torn by hand, or 3 tbsp chopped parsley

DIRECTIONS:

  1. Heat the oil gently in a medium saucepan and sauté the onion until translucent. Add the garlic and the oregano, and as soon as the garlic aroma rises, the tomatoes, sugar, salt, and pepper.
  2. Cover the mixture and cook gently for 15 minutes, stirring occasionally. Add the tomato paste and cook for 15 more minutes, adding a little hot water if needed. Stir the sauce often at this stage in case it sticks. It should be quite smooth and thick by the end.
  3. Remove the sauce from the heat and mix in the basil or parsley.
