Salsa Di Pomodoro (Italian Tomato Sauce)
A really good meatball or pasta sauce recipe.

INGREDIENTS:
- 2-3 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 (28oz) can of tomatoes with their liquid, puréed
- ½ tsp brown sugar
- salt and freshly ground black pepper
- 1 tbsp tomato paste
- hot water
- 3-4 sprigs of fresh basil, torn by hand, or 3 tbsp chopped parsley
DIRECTIONS:
- Heat the oil gently in a medium saucepan and sauté the onion until translucent. Add the garlic and the oregano, and as soon as the garlic aroma rises, the tomatoes, sugar, salt, and pepper.
- Cover the mixture and cook gently for 15 minutes, stirring occasionally. Add the tomato paste and cook for 15 more minutes, adding a little hot water if needed. Stir the sauce often at this stage in case it sticks. It should be quite smooth and thick by the end.
- Remove the sauce from the heat and mix in the basil or parsley.
