Stuffed Mushrooms

Justly famous from many a New Year's Eve

3 dozen medium sized white or crimini mushrooms
3 large garlic cloves
1 cup bread crumbs
1 egg
1 tsp salt
1/2 tsp pepper
1 cup parsley
6 tbs. olive oil
1/2 cup white wine
1 cup parmesan cheese

YIELD: Makes 36 appetizer mushrooms

  1. Separate mushroom caps from their stems
  2. IIn blender, or food processor blend garlic until fine
  3. Add parsley, mushroom stems, pepper, salt blend till fine
  4. Blend in olive oil, egg, cheese and bread crumbs for a short few seconds
  5. Fill mushroom caps with the mixture 
  6. Drizzle caps with the wine.
  7. Bake in a 425 degree oven for 15 minutes
