Yams, Mashed or puréed

My mother's pureed yam recipe

INGREDIENTS:

  • 4 yams (sweet potatoes)
  • ¼ cup or more orange juice
  • 2 packed tablespoons brown sugar
  • 1 tablespoon butter
  • dash salt
  • 1 cup pecan halves

DIRECTIONS:

  1. Peel the yams, and chop into pieces. Cover with plastic wrap and cook in the microwave until tender, ~8 minutes. Mash or purée with the orange juice, butter and brown sugar.
    In a small frying pan, heat the pecan halves with a tiny bit of butter and salt until the flavour comes out, stirring continuously (don’t burn!).Put the yams in a pretty serving dish and arrange the pecan halves attractively in a pattern that covers the surface.
