Chocolate Crinkles

INGREDIENTS:
- Wet Ingredients
- 1/4 cup vegetable oil (corn, grapeseed or safflower)
- 4 ounces melted unsweetened chocolate
- 2 cups sugar
- 4 eggs at room temperature
- 2 teaspoons vanilla extracr
- Dry Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- Icing sugar to roll the cookies in
DIRECTIONS:
- In a large bowl stir together the oil and sugar. Add the melted chocolate to this mixture. Add the vanilla and then the eggs, one at a time.
- In another bowl mix the dry ingredients except for the icing sugar.
- Gradually add the dry ingredients into the chocolate mixture.
- Cover and chill in the fridge overnight.
- Heat the oven to 350 degrees F. Put the icing sugar into a bowl.
- Scoop out teaspoons of dough and shape them into balls. Then roll the balls into the icing sugar. Place about 2 inches (5 cm) apart on parchment covered cookie sheets. Rinse hands often during this procedure as it is very messy. Bake for 10 to 12 minutes, no more!
