Blueberry Chutney

A great accompaniment to salmon or pork tenderloin.

INGREDIENTS:

  • 8 cups fresh or frozen blueberries
  • 8 cups sweet onions, diced
  • 2 cups vinegar
  • 1/2 cup water (start with 1/4 cup, add more as needed)
  • 1 cup granulated sugar
  • 2 teaspoons coarse sea salt
  • 2 teaspoons ground mustard seed
  • 2 teaspoons ground ginger
  • 1 teaspoon cardamom
  • 1 teaspoon ground fenugreek
  • 1 to 3 chili flakes

DIRECTIONS:

  1. Combine all ingredients in a large pot.
  2. Bring to a boil over medium heat. Turn the heat down and simmer for about 30 minutes, until the blueberries and onions are really soft.
  3. Ladle into hot, sterilized jars and seal with hot lids. ( boil the lids for about 5 minutes).
