Roasted Broccoli

Roasted broccoli finished with grated Manchego and fresh lemon.

INGREDIENTS:

  • 1 head broccoli (about 1 lb.), stem ends trimmed
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice (about 1/2 lemon)
  • 3 garlic cloves, minced
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon honey
  • 1/4 cup freshly grated Manchego or Parmigiano-Reggiano
  • 2 tablespoons hazelnut or almond flakes

DIRECTIONS:

  1. Preheat the oven broiler to 500 degrees. Place a lined baking sheet 6 inches below the element.
  2. Cut the broccoli into florets, leaving one to two inches of stems attached. Discard the remaining thick stalks. In a large mixing bowl, toss the broccoli, olive oil, garlic, salt, and pepper and mix well. Transfer the broccoli mix to the prepared baking sheet.
  3. Broil for 5 to 7 minutes, until the broccoli is crisp-tender and charred in spots. Keep aa close eye on it as different broilers have different power levels.
  4. Sprinkle the grated Manchego generously over the broccoli. Taste and adjust seasoning if necessary. Sprinkle lemon juice all over followed by honey and hazelnuts. Serve as soon as possible.
