Gourmet Onion Garnish

This is an excellent accompaniment with roast beef.

INGREDIENTS:

  • 3 large sweet onions - thinly sliced
  • 1 cup white or Champagne vinegar
  • 3/4 cup granulated sugar
  • mayonnaise to taste
  • celery seed to taste
  • 1/4 teaspoon salt

DIRECTIONS:

  1. Combine the onion slices, vinegar and sugar. Put into a well sealed plastic bag and then into the refrigerator. Marinate overnight or at least 4 hours. Turn the bag over at several intervals so as to ensure that the mixture is well marinated.
  2. Remove from refrigerator and drain well! Mix to taste with salt, mayonnaise and celery seed.
