Gourmet Onion Garnish
This is an excellent accompaniment with roast beef.

INGREDIENTS:
- 3 large sweet onions - thinly sliced
- 1 cup white or Champagne vinegar
- 3/4 cup granulated sugar
- mayonnaise to taste
- celery seed to taste
- 1/4 teaspoon salt
DIRECTIONS:
- Combine the onion slices, vinegar and sugar. Put into a well sealed plastic bag and then into the refrigerator. Marinate overnight or at least 4 hours. Turn the bag over at several intervals so as to ensure that the mixture is well marinated.
- Remove from refrigerator and drain well! Mix to taste with salt, mayonnaise and celery seed.
