Spitzbuben - little rascals
One of our favourite Christmas cookies

INGREDIENTS:
- Cookie Ingredients
- 115g soft butter
- 100g granulated sugar
- 150g all purpose flour
- 65g finely ground almonds
- 1 teaspoon vanilla extract
- Topping and filling Ingredients
- apricot jam
- lemon icing
DIRECTIONS:
- Beat the butter and sugar until very smooth and creamy. Add all other ingredients and knead well together.
- Roll out the dough until very thin. Cut with a small round cookie cutter, about 1 inch in diameter.
- Place the cookies on a buttered and floured cookie sheet and chill for about an hour.
- Bake in a 325 to 350 oven for about 10 minutes until the cookies are somewhat coloured.
- Let the cookies cool and then spread half of them with apricot jam and use the other half to sandwich them.
- Glaze the cookies with lemon icing. Store the finished product in the refrigerator or the freezer.
