Spitzbuben - little rascals

One of our favourite Christmas cookies

INGREDIENTS:

  • Cookie Ingredients
  • 115g soft butter
  • 100g granulated sugar
  • 150g all purpose flour
  • 65g finely ground almonds
  • 1 teaspoon vanilla extract
  • Topping and filling Ingredients
  • apricot jam
  • lemon icing

DIRECTIONS:

  1. Beat the butter and sugar until very smooth and creamy. Add all other ingredients and knead well together.
  2. Roll out the dough until very thin. Cut with a small round cookie cutter, about 1 inch in diameter.
  3. Place the cookies on a buttered and floured cookie sheet and chill for about an hour.
  4. Bake in a 325 to 350 oven for about 10 minutes until the cookies are somewhat coloured.
  5. Let the cookies cool and then spread half of them with apricot jam and use the other half to sandwich them.
  6. Glaze the cookies with lemon icing. Store the finished product in the refrigerator or the freezer.
