INGREDIENTS:

  • 2 cups all-purpose flour
  • 1 tablespoon lemon zest
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon lavender buds
  • 2 large eggs
  • 1/4 to 1/3 cup lemon juice
  • 1/2 teaspoon vanilla
  • 1/2 cup butter at room temperature
  • 1 cup granulated sugar
  • 1/2 cup icing sugar

DIRECTIONS:

  1. Whisk flour, lemon zest, baking powder, salt and lavender in a medium bowl
  2. Whisk eggs, lemon juice and vanilla in a small bowl.
  3. Beat butter and sugar in the bowl of a stand mixer fitted with the paddle attachment until pale and creamy - about 2 minutes.
  4. Add lemon mixture and beat - about 1 minute, to combine well. Reduce speed to low and add the dry ingredients in three batches, mixing just until combined after each batch before adding more. The dough will be very soft at this point. Cover the dough with plastic wrap and chill at least two hours and up to two days.
  5. Place racks in the middle and lower third of the oven. Heat the oven to 350 degrees F. (325 for a convection oven). Use a teaspoon to scoop out the dough and quickly roll into medium small balls, working quickly so the dough has no chance to warm up.
  6. Drop each dough ball into icing sugar and roll to coat evenly. Divide the cookies between 2 parchment covered
