Ham and Roasted Potato Casserole

INGREDIENTS:
- 1.5 lbs. nugget potatoes sliced lengthwise or in thirds
- 1 small or medium onion, diced
- 1/2 teaspoon kosher salt
- 2 or 3 cloves garlic, skinned and finely chopped
- 1/4 teaspoon black freshly ground black pepper
- 1/2 teaspoon paprika
- 1 tablespoons butter, cubed
- 2 cups cheddar or monterey jack or mozzarella cheese, grated
- 1 1/4 cups cooked ham, cubed
- 4 stalks green onion, sliced
DIRECTIONS:
- Preheat oven to 400°F. Spray an 8"×8" baking dish with nonstick cooking spray.
- In a bowl combine potatoes, onion cubes, salt, pepper, paprika and garlic salt.
- Stir until the potatoes are coated with the seasoning. Pour mixture into prepared baking dish. Dot the top of the potatoes with cubed butter.
- Bake uncovered for about 35 minutes (until potatoes are fork tender.) Take it out of the oven and add shredded cheese and crumbled bacon. Put it back in the oven, uncovered, for another 8 minutes (until cheese is melted.)
- Top with sliced green onions before serving.
